Borja Cabrera of El Horno Restaurant, La Oliva's Representative at Madrid Fusión

The municipality backs local cuisine from northern Fuerteventura exemplified by the Villaverde establishment. La Oliva will be present once again at the major national gastronomic fair.

The City Council of La Oliva, through the Department of Commerce, will count on chef Borja Cabrera Rodríguez of the El Horno restaurant to represent the municipality at the 2026 edition of Madrid Fusión, one of the country’s premier gastronomic fairs.

The venue in Villaverde, overseen by Lenzo Gutiérrez, floor manager, and Antonio Rodríguez (Toño), the head chef, is renowned for a concept built around local products and traditional techniques.

According to the council ahead of the event, El Horno’s cuisine is rooted in Canary culinary tradition, highlighting open‑oven‑cooked goat meat, as well as dishes such as roasted kid, gofio mousse, and the day’s fresh fish, all paired with a curated wine selection prepared by the floor team.

Mayor Isaí Blanco and Commerce councilor Alexandra Martín will accompany the municipal chef during the fair. Blanco stated:

“The presence of La Oliva at a fair as prestigious as Madrid Fusión is a unique opportunity to showcase our municipality, our professionals, and the quality of gastronomy produced in Fuerteventura from local ingredients.”

Martín added:

“Gastronomy plays a key role in the economic and cultural development of La Oliva, and it is a source of pride to support an emblematic local restaurant and to back young chefs on a top‑level national stage.”
