The Gastronomic History of La Oliva
The international gastronomy sector savors La Oliva’s story in Madrid with “Breathe Nature, Discover History.”
The success of last year’s external tourism meeting of La Oliva at FITUR 2025 already hinted at the approach for the next edition of the international fair. The municipality, through its Tourism Department headed by David Fajardo, leverages local cuisine, products, and especially the town’s own chefs to present a new destination‑promotion concept: “Breathe Nature, Discover History.”
The event targets national and international press and food critics, aiming to maximise FITUR’s promotional power for the municipality. Held in a venue in central Madrid, La Oliva once again showcased its historic heritage and Majorero identity—following the morning presentation at the AMTC stand—through a specialised tasting for the press.
The menu itself acts as a culinary tour of the municipality, guiding diners through key heritage sites such as:
- Castillo del Tostón
- Centro de Interpretación de la Ruta del Agua
- Los Molinos
These landmarks are paired with the finest flavours of La Oliva’s local produce and the innovative dishes of municipal chefs like Endika Grangel.
Zero‑kilometre (locally sourced) products take centre stage in the culinary narrative, including:
- Cherne (local fish)
- Octopus
- Gofio (toasted grain flour)
- Olive oil
- Tindaya goat cheese
- Wine from Bodega Conatvs in Los Lajares
These ingredients bring to life a gastronomic route that highlights La Oliva’s local identity and heritage.
“After the presentation to AMTC at IFEMA, we continue with the exposure FITUR offers for national and international projection and we show food critics this new proposal that complements the traditional ‘sun and beach’ model, highlighting our historic heritage, this time reflected in various dishes by Endika Grangel, a chef from our municipality,” said Mayor Isaí Blanco.
“Following the strong impact on specialised media from last year’s meeting, we knew we had to repeat this strategy for this edition’s campaign. With historic heritage, our identity, and the living landscape at the core of our proposal, one of our young chefs, Endika Grangel, creates a menu inspired by the municipality’s historic buildings using zero‑kilometre products from the area,” added Tourism Councillor David Fajardo.
