title.Authentic Flavors of Madrid's La Cebada Market Fusion

.

Program Overview

Madrid Fusión opens its second professional day with an extensive schedule of Fuerteventura‑related activities, both inside the IFEMA fairgrounds and beyond, at the renowned Mercado de La Cebada. The program features live cooking demonstrations by Majorero chefs, as well as tastings led by national wine and cheese experts and gastronomic influencers. The initiative aims to promote a new, more sustainable form of tourism—one that seeks authentic experiences and products, appealing to the “memory of the palate.”

Official Statements

“The flavors of Fuerteventura arise from local products and good craftsmanship in the kitchen; it is those unique memories, that palate memory, that we are sharing at Madrid Fusión,” said Marlene Figueroa, Tourism Counselor of the Fuerteventura Cabildo.

To deliver this vision, the Tourism Department has partnered with the Department of Agriculture, Livestock and Fisheries, headed by Matías Peña, offering a program stamped with the Majorero seal:

“We showcase the best of our local product, which is a benchmark for its high quality,” the agriculture counselor added.

Cheese and Wine Tasting

At noon, a tasting of cheeses and wines under the campaign “From Humility to Excellence: Cheeses and Wines of Fuerteventura” will take place. Participants include:

  • Alberto González, winemaker from Bodega Conatvs
  • Noemí González, “fromelier” of the Martín Afinador team, Spain’s 2024 runner‑up and Master Fromelier 2024
  • Food‑content creators @gourmetismo, @lariojatoeat, @el_gastrosofo_bohemio, @gastro.viajera and @davidbellolv

The event also features the Martín Afinador team from @quesartemartin and @patriciavargasnet, managing @gourmetquesos2.0 and @quesojobs, with support from @kike_riasbaixas and @aquelandoeventos.

This showcase of flavors, textures and aromas is aimed at the general public—not just professionals—and forms part of the Tourism Department’s strategy to attract a more discerning, detail‑oriented visitor who demands genuine local products and services, thereby generating new island‑based economic opportunities linked to tourism.

Live Demonstrations at IFEMA

Parallel to the tasting, the IFEMA schedule includes live presentations of the culinary offerings from the municipalities of Antigua and Betancuria. Chefs Juan Carlos Campos (Mar Dorado‑Hotel Ereza Mar, Caleta de Fuste) and Alejandro Acosta (El Pirata Verde, Betancuria) will demonstrate their recipes on site.

In the “Saborea Fuerteventura” area, located within the “Saborea España” stand, cheese expert and founder of Piscolabis Madriz Cheese Boards, Annet Guevara, together with José Luis Martín, director of the Best Cheeses of Spain competition, will host several guided cheese tastings featuring Fuerteventura products.

The overall program for Madrid Fusión—one of the world’s premier gastronomy summits—will also see continued participation from the Martín Afinador team (@quesartemartin and @patriciavargasnet), overseeing @gourmetquesos2.0 and @quesojobs.
